Can someone explain to me how to set TextMaker NX on my Samsung tablet so it's the default app for opening .docx files?

I don't have a Samsung tablet to test, but the standard Android method (on a Pixel or other phones and tablets with a more vanilla version of Android) is that when you first click on a file of a certain type, it will give you a pop up with either a list of possible apps to open it with or a default choice and an option to list other apps. In addition to making an app selection it asks "Just once" or "Always." But it's still not what you would hope for. There are very few apps that Android treats as system wide defaults, so this default association of docx to Textmaker will only be true for the file manager you happen to be using. If you use a different file manager, you will have to do the same thing over again.
If a default for docx has already been assigned (as the Google Files app might do, associating it with Google Docs) there should be a three dot menu or some such next to the file name in the file manager that will allow you to change it.
Hope this helps, and apologies if this does not because Samsung does things dramatically different.
