Is there a way to set up a Default Folder to have all new document saved in?

The File=>Save as dialog is basically a Windows Explorer Window. You can pin a custom folder into the navigation bar of that dialog or create a quick path to fast access any folder you like.

We refrained from offering a default folder. Instead, we always save/open from/to the last-accessed folder. As long as you stay in the same folder, the behavior is what you want, and from our experience our current method is what the majorit of our customers prefer. (I personally hate it when MS Office always starts in some strange default folder that I never picked).
